"The cockery is from a Michelin Star River side resturant in Newcastle, UK, where I worked; there is also a very strong New Orleans flavour mixed in with the Tobago charm. I was inspired while working at Hilton International as a chef. Fortunately, i was able to work alongside such greats as Albert Roux, Maitre, Cuisinier de France, at Stanely Hall Resort in the UK."
